Braai Day Recipe: Edamame Bean Salad

Susan Lin from Avondale loves creating new dishes. Her friends often ask her for new recipe ideas. During lockdown she was inspired to simplify and add more healthy ingredients to some of her dishes so that other families can enjoy it too. This salad is really refreshing with a bit of a bite and will be the perfect accompaniment to a chicken or pork dish.
INGREDIENTS
1 bag of shelled Edamame beans (400g)1 medium red onion1 medium sweet bell pepper1 pack of bacon (200g)1/2 cup of dried cranberries1 small bunch of coriander2 chilies (optional depending on preference)2 tsp fish sauce1 tsp sesame oil1 tsp sugar
RECIPE STEPS
- Boil edamame beans for a few minutes, leave to cool in cold water, rinse and drain.
- Cut bacon into small pieces and fry until crispy. Leave to cool on a paper towel.
- Chop up the onion, pepper, cranberries, coriander and chilies, then place in a salad bowl along with the bacon.
- Add in the fish sauce, sesame oil and sugar to the salad.
- Mix evenly. Then serve!
