LAMB CURRY CHOPS SERVED WITH SA-STYLE POTATO SALAD

Our Top 3 finalists went head-to-head in the onsite Braai Challenge, where celebrity chef Bertus Basson and two expert judges brought their industry skills to the table to crown the CG Braai Challenge 2025 winner.

Snagging 3rd place, Alvirno Coetzee spiced things up with his juicy lamb curry chops - a real crowd-pleaser! Served with a lekker SA-style potato salad.

Recipe below:

Ingredients

  • 4-8 Lamb Chops (any desired cut)
  • 2 cloves garlic (crushed)
  • 2 Tablespoons Garum or Biryani Masala
  • 1 Tablespoon Smoked Paprika
  • 1 Tablespoon all-in-one seasoning (alternatively salt & pepper)
  • 1 Teaspoon Ground Cumin
  • 1 Teaspoon Ground Coriander
  • 1 Teaspoon Cayenne Pepper
  • 2 Teaspoons Italian herbs
  • 1 Teaspoon Tumeric
  • Packet of bay leaves (torn)
  • 4 Tablespoons Extra Virgin Olive Oil
  • 2 big red onions (chopped in thick circles)
  • 1 cup brown vinegar
  • 1 Tablespoons apricot jam
  • 1 Tablespoon = 15ml
  • 1 Teaspoon = 5ml

COOKING METHOD:

  • Fry the onions in the oil for about 4 minutes until they are soft and golden but not brown.
  • Combine all the dry spices and seasonings together in a bowl,. Mix well.
  • Add the spice bowl with a bit of water in the pan and fry for another 2 minutes.
  • Stir in the vinegar and jam then heat until boiling. Ensure to stir frequently.
  • Remove from the heat and let the marinade cool down to room temperature.
  • Place the chops in a marinating bowl, add the torn bay leaves and pour the cooled-down marinade over the meat. 
  • Stir thoroughly ensuring all sides of the chops are in contact with marinade. 
  • Cover the bowl with clingwrap for the flavours to remain inside the bowl. 
  • Marinate and refrigerate for at least 24 hours.
  • Turn the chops every 2 hours during this time.
  • When the braai fire is going remove the clingwrap and let the meat rest outside.
  • Braai for about 8–10 minutes over hot coals turning the meat every 2min (4times).
  • Serve the chops straight from the grill aside with desired side dish / salad.
  • Enjoy with favourite cold beverage.
